Blackbean Brownies

{ This recipe is gluten free and dairy free }

1 can black beans (approximately 400g)

2 eggs

3tbs extra virgin coconut oil

3/4 cup cocoa

1/2tsp sea salt

1tsp vanilla extract

1/2 raw sugar (slightly ground)

1 1/2tsp baking powder


  • Preheat oven to 150C and prepare a non-stick muffin tray or baking dish (lightly sprayed with cooking oil)
  • Place all the ingredients in a blender and mix till blended
  • Scoop the batter into prepared tray or dish and bake for 15minutes or until skewer comes out clean
  • Allow the brownies to cool on a rack and then enjoy

Caroline’s Note: Add nuts or chocolate chips for alternative flavours. For a more intense cocoa taste, try grating 1/8 cup of Koko Samoa (roasted cacao beans) into the batter. To make the recipe vegan friendly, use the equivalent of 2 chia/flax eggs.
